Your reminder overview is not linked to the paid invoices. So that the reminded items or drafts disappear from the overview.
The presentation in Projo is based on issued or draft reminders.
Only the drafts can be removed from the overview here. If the reminder is removed in confirmed status, the invoice in the project is automatically deleted.
According to my experience, the reminder suggestions should be displayed as under the menu -> Office -> Outgoing invoices. Here we are talking about the items due.

Can you please create an overview for us with the following fields under the Reminders tab:
Invoice/customer name/contract/status/invoice amount/ due date/net/ open net/gross/ outstanding gross/ default interest /delay days/reminder date/reminder level (1,2,3, etc.)/internal field for notes.
When sending a reminder, it is necessary to link it to the invoice. If payment is made, it disappears from the overview.
